La Coquille (The shell)
A true icon among our exceptional parcels. Situated on the very ground that was once an ancient sea, this parcel boasts an abundance of fossils and shells, which lend it an incomparable character. Home to very old vines that have flourished for over six decades, this parcel has been meticulously cultivated to produce the very finest grapes for our Minervois La Liviniere wine. From this parcel, we craft our most exclusive wine, the highly sought-after ‘Clos La Coquille’, a true reflection of the luxury and refinement of Domaine Chabbert’s winemaking.
Les Boussoles
A Key Element in Our Symphony of Wines. This one-of-a-kind parcel, planted with only the finest 60-year-old Cinsault vines, contributes a distinctive roundness and depth to our wines. From this parcel, we have created our highly limited and exclusive ‘Chabbert Boussoles’ wine. This 100% Cinsault wine is aged in premium oak casks previously used for Bordeaux Grand Crus Classes, and each of the 1000 numbered bottles is a true worldclass masterpiece.
Les Terriers
Imagine standing high on the stunning plateau, where the clouds caress the valleys and form a breathtaking backdrop to the breathtaking landscapes of our exclusive ‘Les Terriers’ parcel, nestled in the heart of Minervois and Minervois La Liviniere. With a diverse array of vine varieties, including Syrah and Grenache, this parcel boasts a unique mineral feeling crafted from old and hard limestones, while a small yet exceptional parcel planted with very old Carignan offers unparalleled exclusivity to our Minervois La Liviniere wines.
These parcels, along with several others as Le Moulin de Monsieur, Le Cayla, Combe Grosse, La Caguille or Les Gazels contribute to the unique and luxurious wines crafted by Domaine Chabbert. Each variety, like the unique note in a symphony, is treated with respect; our Syrah « Coquille » ferments in foudre for a unique oak flavor, while Grenache « Les Terriers » is vinified in concrete tanks to preserve its fresh, fruity notes. Other varieties are harmonized in stainless-steel vats, maintaining the fruit’s vibrancy. We skillfully employ winemaking techniques to extract optimal flavors, ensuring each sip delivers a luxurious, unforgettable experience.
As the aging process unfolds, our wines mature in chosen vessels, reflecting each wine’s flavor profile and aging potential.
